A five-mana 5/5 flyer is already a good deal on a Dragon, but Iymrith is much more than that.
Iymrith, Desert Doom has ward 4 as long as it’s untapped.
It’s going to be pretty difficult for opponent’s to interact with Iymrith the turn you play it, even more so if you have any kind of protection or counterspell. Opponent’s have to risk using most or all of their mana on a turn to try to kill it unless it’s attacking, in which case you have all your mana available to answer a removal spell. And once you attack and connect with Iymrith, it will get increasingly harder for opponent’s to take it down.
Whenever Iymrith deals combat damage to a player, draw a card. Then if you have fewer than three cards in hand, draw cards equal to the difference.
Iymrith will always net you a card once it deals combat damage to player, but it really shines if you’re empty-handed because the trigger turns into a draw three effect. If you get low on resources keeping Iymrith alive, it will refuel your hand as a reward.
